Red rice with vegetables recipe
Ingredients for 2 People:
- A head of Chioggia radicchio
- Half a glass of red wine
- One carrot
- 60 grams of chard cooked and cut into small pieces
- 60 grams of cooked, diced pumpkin
- Extra virgin olive oil, salt, pepper and thyme to taste
- 140 g red rice.
Boil the rice in plenty of salted water for the set cooking time (the rice for this recipe took 40 minutes).
Cut the carrot into cubes, season with a little salt and pepper and sauté in the Primecook pan with a little extra virgin olive oil for a few minutes. Then put the carrot aside and use the same pan to cook the radicchio. Cut the radicchio into fine strips and soften it with half a glass of red wine and a pinch of salt.
When the wine has evaporated and the radicchio has softened, add the other vegetables (pumpkin, chard and carrot) to the pan and turn off the heat.
Drain the rice and add it to the pan too, sautéing it with the vegetables for a few minutes, just long enough to mix all the ingredients.
Serve with extra virgin olive oil and thyme.
